Limoncello Spritz Drink (Printable Version)

# What You Need:

→ Mock Limoncello

01 - Fresh lemon juice, 1/3 cup (80 ml)
02 - Granulated sugar, 1/4 cup (50 g)
03 - Water, 1/4 cup (60 ml)
04 - Lemon zest, from 1 lemon
05 - Pure vanilla extract, 1/2 teaspoon

→ For the Spritz

06 - Chilled sparkling water, 1 cup (240 ml)
07 - Chilled non-alcoholic sparkling wine or extra sparkling water, 1/2 cup (120 ml)
08 - Ice cubes, as needed
09 - Lemon, 1 small, thinly sliced
10 - Fresh mint sprigs, optional for garnish

# Steps:

01 - In a small saucepan, combine lemon juice, sugar, water, and lemon zest. Heat over medium heat, stirring constantly until sugar dissolves, approximately 2-3 minutes. Remove from heat and stir in vanilla extract. Allow to cool completely, then strain through a fine mesh strainer to remove zest particles.
02 - Fill two large wine glasses halfway with ice cubes.
03 - Pour 3 tablespoons of cooled mock limoncello syrup into each prepared glass.
04 - Pour 1/2 cup chilled sparkling water and 1/4 cup non-alcoholic sparkling wine (or additional sparkling water) into each glass.
05 - Stir gently to thoroughly combine all components.
06 - Top each glass with lemon slices and fresh mint sprigs if desired. Serve immediately while chilled.
