Step 02

Add cumin seeds and allow to crackle, then add chopped onion, ginger, and green chili. Sauté until softened, about 3-4 minutes. Stir in ground coriander, garam masala, turmeric, and chili powder. Add mashed vegetables and cook for 2-3 minutes. Fold in fresh cilantro, season with salt to taste, and transfer to a plate to cool completely.

Shape the Samosas: Divide rested dough into 6 equal balls. Roll each ball into a thin oval shape approximately 6 inches in length. Cut each oval in half lengthwise. Take one half, wet the straight edge with water, and form into a cone by bringing the two corners together and pressing to seal. Fill each cone with 2 tablespoons of cooled vegetable filling. Wet the open top edge and pinch closed to seal completely. Repeat with remaining dough and filling.
